Delicious vegan cinnamon rolls filled with sweet apple pie filling, perfect for brunch or a special occasion.

  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup almond milk (or any plant-based milk)
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 cup apple pie filling (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, mix the flour, sugar, baking powder, and salt.
  3. In another bowl, combine almond milk, melted coconut oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until combined.
  5. Roll out the dough on a floured surface into a rectangle.
  6. Spread the apple pie filling evenly over the dough and sprinkle with cinnamon.
  7. Roll the dough tightly into a log and cut into 1-inch slices.
  8. Place the rolls in the greased baking dish.
  9. Bake for 20-25 minutes or until golden brown.
  10. Allow to cool slightly before serving.

Notes

Make sure your coconut oil is melted but not hot. Knead the dough gently to maintain fluffy texture. These cinnamon rolls can be stored in an airtight container for up to three days in the fridge.
