Ingredients
  

  • For the Crepes:
  • 1 cup all-purpose flour
  • 2 scoops (60g) protein powder
  • 2 large eggs room temperature
  • cups milk
  • ¼ cup Greek yogurt
  • 1 tsp vanilla extract
  • 1 tbsp melted butter
  • ¼ tsp salt
  • ½ tsp baking powder
  • For the Protein Pudding:
  • 1 cup Greek yogurt
  • 1 scoop vanilla protein powder
  • 1 tbsp milk
  • ½ tsp vanilla extract
  • Sweetener to taste

Instructions
 

  • Combine Dry Ingredients:
    Sift flour and protein powder
    Add salt and baking powder
    Whisk until well combined
  • Mix Wet Ingredients:
    Beat eggs until frothy
    Gradually add milk and Greek yogurt
    Stir in vanilla and melted butter
  • Create Final Batter:
    Slowly incorporate dry into wet ingredients
    Blend until smooth
    Let rest for 20 minutes
  • Cook Crepes:
    Heat non-stick pan over medium heat
    Pour ¼ cup batter and swirl
    Cook 1-2 minutes per side
  • Prepare Pudding:
    Blend all pudding ingredients until smooth
    Chill for 30 minutes to thicken

Notes

Best enjoyed fresh, but crepes can be made ahead and stored. Pudding filling should be prepared just before serving.
