Ingredients
  

Banana Bread Mix

  • 1 package banana bread mix 15.25 oz
  • 3 medium bananas about 1½ cups mashed
  • 2 large eggs room temperature
  • 1/3 cup vegetable oil
  • 1/4 cup water
  • 2 tbsp Greek yogurt
  • 1 tsp pure vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/2 cup chopped walnuts optional

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  • Bring eggs to room temperature.
  • In a large bowl, mash bananas until mostly smooth.
  • Mix in eggs, oil, water, yogurt, and vanilla extract until well combined.
  • Add banana bread mix and cinnamon. Fold gently 12-15 times until just combined.
  • If using, fold in walnuts.
  • Pour batter into prepared pan.
  • Bake 55-60 minutes or until a toothpick comes out with a few moist crumbs.
  • Cool in pan for 10 minutes, then remove to wire rack.
  • Cool completely before slicing.

Notes

Storage: Keep wrapped at room temperature for up to 3 days, refrigerated for 1 week, or frozen for up to 3 months.
