Ingredients
  

Crust

  • 1.5 cups graham cracker crumbs
  • 2 tbsp sugar
  • 5 tbsp unsalted butter melted

Cheesecake Filling

  • 16 oz cream cheese room temperature
  • 1 cup powdered sugar sifted
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream cold

Toppings

  • 1/2 cup caramel sauce
  • 1/2 cup semi-sweet chocolate chips melted with warm cream
  • 1/2 cup pecans toasted and chopped

Instructions
 

  • Line 12 mini cups or springform pans on a tray that fits in your fridge.
  • Mix graham cracker crumbs, sugar, and melted butter. Press firmly into each cup.
  • Beat cream cheese until smooth. Add powdered sugar and vanilla, mix well.
  • In a chilled bowl, whip the cold heavy cream until soft peaks form. Fold into cream cheese mixture.
  • Pipe or spoon filling into crusts, filling 3/4 full. Smooth tops with a spoon dipped in water.
  • Top with caramel, melted chocolate, and chopped pecans. Chill for at least 2 hours or until set.

Notes

For best results, chill overnight. Add toppings within 8 hours of serving to keep texture perfect. Store in fridge for up to 5 days. Add sea salt to caramel for extra flavor depth!
