  • ¾  cup (150g) granulated sugar
  • 2 tsp baking powder
  • ½  tsp salt
  • Wet Ingredients:
  • 1 large  large 
  • ½ cup (120ml) milk (dairy or plant-based)
  • ⅓  cup (80ml) melted butter or coconut oil
  • 1 tsp vanilla extract
  • Optional Add-Ins:
  • 1 cup fresh or frozen blueberries, chocolate chips, or diced fruit
  • ½  cup chopped nuts (e.g., walnuts, almonds)

Instructions
 

  • Preheat the Oven: Set your oven to 375°F (190°C) and line a muffin tin with paper liners or grease lightly.
  • Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
  • Combine Wet Ingredients: In a separate bowl, whisk the egg, milk, melted butter, and vanilla extract until smooth.
  • Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients. Gently fold until just combined (a few lumps are okay). If using add-ins, fold them in now.
  • Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ⅔ full.
  • Bake: Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool: Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
