Homemade Chocolate Gummies Recipe

A delightful treat combining rich chocolate with a perfectly chewy texture. Makes 24 gummies.

Ingredients
  

  • 1 cup high-quality dark chocolate (70% cocoa)
  • 1/2 cup plant-based gelatin powder
  • 1/3 cup water
  • 1/4 cup coconut milk
  • 3 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 2 tablespoons cocoa powder for dusting (optional)

Instructions
 

  • Prepare the gelatin:
    Combine plant-based gelatin powder with cold water
    Let it sit for 5 minutes until fully absorbed
  • Melt the chocolate:
    Use a double boiler to melt chocolate over low heat
    Keep temperature below 115°F
    Stir until smooth
  • Heat the liquids:
    In a saucepan, warm coconut milk, honey/maple syrup, and salt
    Heat until just below simmering (around 180°F)
    Remove from heat
  • Combine ingredients:
    Add bloomed gelatin to warm milk mixture
    Whisk until dissolved
    Strain through fine-mesh strainer
  • Mix with chocolate:
    Slowly pour gelatin mixture into melted chocolate
    Whisk constantly until smooth
    Add vanilla extract
  • Fill molds:
    Pour mixture into silicone molds while warm
    Tap molds to remove air bubbles
  • Chill and set:
    Refrigerate for at least 3 hours
    Remove from molds once completely set
    Dust with cocoa powder if desired
