Greek Lemon Chicken with Potatoes

Ingredients
  

  • For the Marinade
  • Fresh lemon juice (from 2-3 lemons)
  • 1/4 cup extra-virgin olive oil
  • 4-6 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon fresh thyme leaves
  • Salt and freshly ground black pepper to taste
  • Optional: pinch of red pepper flakes
  • Main Components
  • 4-6 chicken pieces (preferably bone-in, skin-on thighs or a mix of thighs and drumsticks)
  • 4-5 medium potatoes, peeled and cut into even chunks
  • Additional olive oil for drizzling
  • Fresh parsley for garnish
  • Lemon wedges for serving

Instructions
 

  • Marinade Preparation
    In a large bowl, combine lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper.
  • Mix well to ensure all ingredients are evenly distributed.
  • Add chicken pieces to the marinade, ensuring each piece is well-coated.
  • Cover and refrigerate for at least 2 hours, preferably overnight.
  • Cooking Process
    Preheat oven to 425°F (220°C).
  • Remove marinated chicken from refrigerator 30 minutes before cooking.
  • Arrange chicken pieces and potato chunks in a single layer in a large baking dish.
  • Pour remaining marinade over the chicken and potatoes.
  • Drizzle with additional olive oil.
  • Place in preheated oven and roast for 45-55 minutes.
  • Halfway through cooking, baste chicken and potatoes with pan juices.
  • Cook until chicken reaches internal temperature of 165°F (74°C) and potatoes are golden brown.

Notes

For Perfect Results 
  • Use uniform-sized potato chunks for even cooking
  • Don't overcrowd the baking dish
  • Allow chicken to come to room temperature before cooking
  • Use a meat thermometer to ensure proper doneness
  • Keep potatoes in a single layer for optimal crispiness
