  • 2-3 garlic cloves, minced

Instructions
 

  • Caramelize the Onions: Melt butter in a large skillet or Dutch oven over medium heat. Add sliced onions and cook for 25-30 minutes, stirring occasionally, until golden brown. Add minced garlic in the last 2 minutes.
  • Toast the Rice: Stir in rinsed rice and cook for 1-2 minutes to lightly toast.
  • Simmer: Add beef broth, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
  • Add Cheese: Remove thyme sprigs and bay leaf. Sprinkle shredded cheese evenly over the top.
  • Broil: Place under a preheated broiler for 2-3 minutes until cheese is melted and bubbly.
