Ingredients

  • 1 medium head of cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 3 cloves of garlic, minced
  • 6 cups vegetable broth
  • 1 can of diced tomatoes (14.5 oz)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat a splash of oil over medium heat. Add the onion and garlic, cooking until the onion is translucent.
  2. Stir in the carrots and cabbage, cooking for about 5 minutes until they start to soften.
  3. Pour in the vegetable broth and add the canned tomatoes, thyme, salt, and pepper.
  4. Let the soup come to a boil, then reduce the heat and simmer for about 20 minutes until the vegetables are tender.
  5. Taste and adjust seasoning as needed before serving. Enjoy!

Notes

For a heartier version, consider adding cooked beans or lentils. Use a large pot to cook ingredients evenly.
