A delicious and nutritious cabbage soup that is low in calories, packed with flavor, and perfect for any season.

Ingredients

  • 1 medium onion, chopped
  • 1 green bell pepper, chopped
  • 4 cloves garlic, minced
  • 1 head of cabbage, chopped
  • 1 can diced tomatoes (14 oz)
  • 6 cups vegetable broth
  • 1 teaspoon thyme
  • Salt and pepper, to taste

Instructions

  1. In a large pot, sauté the chopped onion and bell pepper until tender.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chopped cabbage and cook for about 5 minutes until it starts to soften.
  4. Pour in the diced tomatoes and vegetable broth. Add thyme, salt, and pepper.
  5. Bring the soup to a boil, then reduce heat and let it simmer for about 30 minutes. Enjoy!

Notes

For a smoother texture, you can use an immersion blender to puree part of the soup. Store leftovers in an airtight container in the refrigerator for about 4-5 days, or freeze for up to 3 months.
