Warm Apple Cinnamon Cottage Cheese Bake

A cozy dish perfect for breakfast or a light dessert, combining tender baked apples, warming cinnamon, and creamy cottage cheese for a protein-rich treat.

Ingredients

  • 3 medium apples (about 1 lb), peeled, cored, and sliced
  • 1 cup cottage cheese (small curd preferred)
  • 2 large eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp ground cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup rolled oats or 1/3 cup flour
  • 2 tbsp melted butter or neutral oil
  • Optional: 1/4 cup chopped walnuts or pecans, a pinch of nutmeg

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8×8-inch baking dish.
  2. Toss apple slices with half the cinnamon and 1 tbsp maple syrup. Spread them in the dish.
  3. Mix the cottage cheese, eggs, remaining maple syrup, vanilla, salt, oats/flour, melted butter, and the rest of the cinnamon until mostly smooth.
  4. Pour the cottage cheese mixture over the apples and smooth the top. Sprinkle nuts or oats if using.
  5. Bake for 30–35 minutes, until the edges bubble and the center is just set. A toothpick should come out mostly clean with a few moist crumbs.
  6. Let rest for 10 minutes before serving warm.

Notes

For added texture, blend the cottage cheese briefly before mixing. Use tart apples for best results.
