  • 1 cup walnuts, chopped
  • 1/2 cup orange juice, freshly squeezed
  • Zest of 1 large orange
  • 1 cup sugar
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a small bowl, combine the chopped dates and walnuts with a bit of flour to prevent them from sinking.
  3. In a large bowl, mix the sugar, eggs, and oil until well combined.
  4. Stir in the orange juice and zest.
  5. In another bowl, mix flour, baking powder, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Gently fold in the dates and walnuts.
  8. Pour the batter into the prepared cake pan and bake for about 30-35 minutes, or until a toothpick comes out clean.
  9. Let it cool in the pan for a few minutes before transferring to a wire rack.

Notes

For a deeper orange flavor, add extra zest and a touch of orange extract.
