Crispy egg rolls filled with savory ingredients and a burst of unique flavors, perfect for game nights or parties.

Ingredients

  • 1 cup shredded cooked chicken (or tofu for a vegetarian option)
  • 1 cup coleslaw mix
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Egg roll wrappers
  • Oil for frying

Instructions

  1. In a mixing bowl, combine the shredded chicken, coleslaw mix, diced bell peppers, green onions, soy sauce, garlic powder, and paprika. Mix well until everything is combined.
  2. Lay out an egg roll wrapper on a clean surface, with one corner pointing towards you.
  3. Spoon about 2 tablespoons of the filling onto the wrapper. Make sure not to overfill!
  4. Fold the bottom corner over the filling, then fold in the sides and roll tightly upwards to seal the egg roll.
  5. Repeat the process until all filling is used or you run out of wrappers.
  6. Heat oil in a deep pan to 350°F (175°C), then carefully fry the egg rolls for about 4-5 minutes until golden brown.
  7. Drain on paper towels and serve with your choice of dipping sauce!

Notes

To keep your egg rolls crispy, ensure the oil is hot enough before adding them in. Avoid overcrowding the pan to ensure even cooking.
