A hearty, flavorful vegetarian lentil soup made with pantry staples like carrots, celery, garlic, and lentils. It’s easy, cozy, and packed with plant-based nutrition.

Ingredients

Scale

1 cup lentils (green or brown)

1 medium onion, chopped

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

4 cups vegetable broth

1 can diced tomatoes (14 oz)

2 teaspoons cumin

1 teaspoon thyme

Salt and pepper to taste

Olive oil for sautéing

Optional: spinach or kale for added greens

Instructions

1. Heat olive oil in a large pot over medium heat. Add chopped onions, carrots, and celery. Sauté for 5–6 minutes.

2. Stir in minced garlic and cook for another minute until fragrant.

3. Add cumin and thyme. Toast the spices for 30 seconds.

4. Pour in diced tomatoes with juices and vegetable broth. Scrape the bottom of the pot.

5. Add rinsed lentils. Bring to a gentle boil.

6. Lower the heat, cover, and simmer for 25–30 minutes until lentils are tender.

7. Stir in spinach or kale during the last 5 minutes if using.

8. Taste and adjust salt and pepper. Serve warm.

Notes

This soup thickens as it sits; just add more broth to loosen when reheating.

You can blend part of the soup for a creamier texture.
