A tender chicken dish in a silky sun-dried tomato cream sauce, perfect for weeknights or date nights.

Ingredients

  • 4 boneless, skinless chicken breasts (or 6 small breasts)
  • Salt and pepper
  • 12 tsp Italian seasoning
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • 1 tsp red pepper flakes (optional)
  • Fresh basil or parsley to finish

Instructions

  1. Pat chicken dry and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and sear for 3–4 minutes per side until golden, then remove and set aside.
  4. Lower heat to medium, add garlic, and sauté for 30 seconds until fragrant.
  5. Add sun-dried tomatoes, cooking for 1–2 minutes.
  6. Pour in chicken broth, scrape brown bits, and let simmer for 2–3 minutes to reduce slightly.
  7. Stir in heavy cream and bring to a gentle simmer, then add Parmesan and red pepper flakes, stirring until the sauce thickens.
  8. Return chicken to the skillet, simmering for 5–8 minutes until chicken reaches 165°F (74°C).
  9. Finish with chopped basil or parsley and serve over your choice of rice, pasta, or mashed potatoes.
