A bright, warming bowl of soup that combines fresh turmeric and ginger with simple vegetables for a restorative meal.

Ingredients

  • 1 tablespoon olive oil or avocado oil
  • 1 medium onion, chopped
  • 23 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon fresh turmeric, grated (or 1 teaspoon ground turmeric)
  • 3 carrots, sliced
  • 2 stalks celery, chopped
  • 1 medium potato or 1 cup cauliflower florets
  • 6 cups vegetable broth or water
  • 1 can (15 oz) cannellini beans, rinsed and drained (optional)
  • Juice of 1 lemon or lime
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish

Instructions

  1. Heat the oil in a large pot over medium heat. Add the onion and a pinch of salt. Sauté until translucent, about 5 minutes.
  2. Add garlic, grated ginger, and turmeric. Cook for 1–2 minutes until fragrant.
  3. Add carrots, celery, and potato (or cauliflower). Stir to coat with the spices.
  4. Pour in the vegetable broth and bring to a simmer. Reduce heat and cook until vegetables are tender, about 15–20 minutes.
  5. Optional: For a smoother texture, blend half or all of the soup with an immersion blender or in batches in a blender.
  6. Stir in rinsed cannellini beans if using, and warm through for 2–3 minutes.
  7. Finish with lemon or lime juice, salt, and pepper to taste. Garnish with chopped herbs and serve.

Notes

For a richer texture, consider adding a splash of coconut milk or roasting the carrots and onion beforehand for a deeper flavor.
