A comforting Tex-Mex casserole featuring layers of zucchini, ground meat, cheese, and black beans for a nutritious and flavorful dish.

Ingredients

  • 2 medium zucchini, sliced
  • 1 lb ground beef or turkey
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 1 cup cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 8 corn tortillas
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, heat olive oil and sauté chopped onion until softened.
  3. Add ground meat and cook until browned; drain any excess fat.
  4. Stir in the diced tomatoes, black beans, taco seasoning, salt, and pepper. Let simmer for a few minutes.
  5. Slice zucchini and layer them at the bottom of a baking dish.
  6. Add a layer of meat mixture, then a layer of cheese, followed by a layer of corn tortillas. Repeat layers until ingredients are used up, finishing with cheese on top.
  7. Bake in the oven for about 25-30 minutes until bubbly and golden.

Notes

For a vegetarian version, swap the meat for lentils or more beans. Use gluten-free tortillas if needed.
