A comforting and flavorful one-pot taco-inspired soup combined with crunchy frios for an irresistible texture.

Ingredients

  • 1 lb ground beef (or turkey for a lighter option)
  • 1 packet taco seasoning
  • 1 can black beans, rinsed and drained
  • 1 can pinto beans, rinsed and drained
  • 1 can diced tomatoes (with green chilies if preferred)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 4 cups chicken, beef, or vegetable broth
  • Frios (tortilla chips) for topping

Instructions

  1. Heat oil in a large pot over medium heat. Add onions and garlic; sauté until translucent.
  2. Add ground beef and season lightly with salt and pepper. Cook until browned.
  3. Stir in taco seasoning and combine well.
  4. Add diced tomatoes, beans, corn, and broth. Stir to combine.
  5. Bring to a boil, then reduce heat and let simmer for 20-25 minutes.
  6. Taste and adjust seasoning. Serve hot, topped with frios and optional toppings.
