A quick and flavorful dinner idea that combines rice, seasoned meat, and customizable taco toppings.

Ingredients

  • 1 cup of rice (white or brown)
  • 1 pound of ground beef or turkey
  • 1 packet of taco seasoning
  • 1 can (15 oz) black beans, drained
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • Optional toppings: shredded cheese, sour cream, avocado, chopped cilantro, salsa

Instructions

  1. Cook the rice according to package instructions and set it aside.
  2. In a skillet over medium heat, brown the ground beef or turkey until fully cooked.
  3. Drain excess fat and stir in the taco seasoning along with a splash of water. Let it simmer for a few minutes.
  4. Add black beans, corn, and diced tomatoes to the meat mixture. Stir until combined and heated through.
  5. In bowls, layer cooked rice, then top with the taco mixture.
  6. Assemble your favorite toppings on top of the bowl.
  7. Serve warm and enjoy with friends and family!

Notes

To keep your rice fluffy, avoid overcooking it. A non-stick skillet works best for browning meat evenly. Store leftovers in an airtight container in the refrigerator for up to 3 days.
