Ingredients

  • 2 medium sweet potatoes, sliced into 1 cm rounds (about 500 g)
  • 2 tablespoons olive oil (30 ml)
  • 1/2 teaspoon salt (3 g)
  • 100 g goat cheese, softened (about 3/4 cup)
  • 1 crisp apple (e.g., Honeycrisp), thinly sliced (150 g)
  • 2 tablespoons hot honey (30 ml)
  • Fresh thyme leaves, for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Line a baking sheet with parchment paper.
  3. Arrange sweet potato rounds on the sheet, brush with olive oil, and sprinkle with salt.
  4. Roast for 20–25 minutes, flipping halfway, until golden and tender.
  5. Let cool slightly, then spread each round with goat cheese.
  6. Top with a thin apple slice and drizzle with hot honey.
  7. Garnish with fresh thyme leaves and serve warm or at room temperature.

Notes

Ensure sweet potato slices are uniform for even cooking. Experiment with different varieties of apples for unique flavors. Adjust the amount of hot honey based on your spice preference.
