A vibrant and refreshing pasta salad perfect for warm days, featuring fresh vegetables and herbs.

Ingredients

  • 8 oz pasta (penne or rotini)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup black olives, sliced
  • 1 cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to the package instructions until al dente. Drain and let cool to room temperature.
  2. In a large bowl, combine the cooled pasta with cherry tomatoes, sliced black olives, diced cucumber, red onion, and fresh basil.
  3. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper until well combined.
  4. Pour the dressing over the pasta mixture and toss to coat evenly.
  5. For the best flavor, refrigerate the salad for at least 30 minutes before serving.

Notes

Use high-quality olive oil for richer flavor. Feel free to add other veggies like bell peppers or corn. For a creamier dressing, consider mixing in some Greek yogurt.
