  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 1 cup pumpkin puree
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 4 ounces cream cheese, softened
  • 2 tablespoons granulated sugar
  • 1 large egg yolk
  • 1/2 teaspoon vanilla extract
  • Coarse sugar or cinnamon sugar for topping

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, beat together the softened cream cheese and 2 tablespoons of sugar until smooth. Add the egg yolk and 1/2 teaspoon of vanilla extract to the cream cheese mixture and mix until well combined.
  3. In a large bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. In another bowl, whisk together 1 cup of sugar, vegetable oil, pumpkin puree, eggs, and 1/2 teaspoon of vanilla extract until well mixed.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Fill each muffin liner halfway with the batter, add 1 tablespoon of cream cheese filling, and then top with more batter.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean. Let cool before transferring to a wire rack.

Notes

Make sure to let the cream cheese soften before mixing. Don’t over-mix the batter for fluffy muffins. Adjust spices to your taste preference.
