Ingredients

  • 1.5 lb boneless, skinless chicken (thighs or breasts), cut into bite-size pieces
  • 3 tbsp low-sodium soy sauce (or tamari)
  • 3 tbsp honey
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp fresh grated ginger
  • 23 cloves garlic, minced
  • 12 tsp sriracha or chili garlic sauce (to taste)
  • 1 tsp sesame oil
  • 12 tbsp neutral oil for cooking
  • Optional: 1 tbsp cornstarch for a thicker glaze
  • 1/2 cup mayonnaise
  • 1 tbsp ketchup or tomato paste
  • 1 tsp rice vinegar
  • 12 tsp sugar or honey (to taste)
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika (sweet or smoked)
  • Pinch of cayenne or hot sauce (optional)
  • 13 tbsp water to thin
  • 34 cups cooked rice (jasmine, basmati, or brown)
  • 2 cups veggies (mix of steamed broccoli, shredded carrots, cucumber slices, edamame)
  • 2 green onions, thinly sliced
  • Sesame seeds and lime wedges, for garnish

Instructions

  1. Cook the rice according to package directions. Keep warm.
  2. In a bowl, whisk together soy sauce, honey, rice vinegar, ginger, garlic, sriracha, and sesame oil.
  3. Add chicken to the marinade and toss. Let sit for 15–30 minutes (or cover and chill for up to 8 hours).
  4. Stir together mayo, ketchup, rice vinegar, sugar, garlic powder, paprika, and cayenne. Add water bit by bit until creamy and pourable. Chill the sauce.
  5. Heat a large skillet over medium-high heat and add oil. Lift the chicken from marinade (reserve marinade) and sear for 4–6 minutes until cooked through.
  6. Pour reserved marinade into the skillet and simmer for 1–2 minutes until slightly thick and glossy. For a thicker glaze, stir in 1 tsp cornstarch mixed with 1 tbsp water and simmer for 30–60 seconds.
  7. Assemble bowls by adding rice, topping with chicken, veggies, green onions, and sesame seeds. Drizzle with Yum Yum Sauce and serve with lime.

Notes

Can customize with seasonal veggies and cooking method. Store chicken, rice, and veggies separately for meal prep.
