Instructions

  1. Heat the butter and olive oil in a large skillet over medium heat.
  2. Add the sliced onions and sauté until soft and translucent, about 5 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Add the sliced potatoes to the skillet, stirring to coat them in the butter and aromatics.
  5. Season with salt, pepper, paprika, thyme, and cayenne pepper (if using).
  6. Pour in the chicken or vegetable broth, ensuring the potatoes are partially submerged.
  7. Cover the skillet and let the potatoes simmer for 20-25 minutes, stirring occasionally, until they are tender and the broth has thickened into a sauce.
  8. For a creamier texture, stir in heavy cream in the last 5 minutes of cooking.
