A delightful and quick stir-fry featuring shrimp and asparagus, packed with flavor and perfect for weeknight dinners or special occasions.

  • 1 pound shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet or wok over medium-high heat.
  2. Add the minced garlic and ginger and sauté until fragrant, about 30 seconds.
  3. Stir-fry the asparagus pieces for 3-4 minutes until they start to soften.
  4. Add the shrimp to the skillet, seasoning with salt and pepper, and cook until pink, about 3-5 minutes.
  5. Pour the soy sauce and sesame oil over the shrimp and asparagus, and stir well to combine.
  6. Cook everything together for an additional 2 minutes, allowing the sauce to coat the ingredients.
  7. Remove from heat and serve warm, with rice or noodles if desired.

Notes

For a crispy texture, avoid overcrowding the skillet. Cook in batches if necessary. Store leftovers in an airtight container in the fridge for up to 3 days.
