A crisp, juicy salad featuring sweet citrus, toasty sesame, and tender chicken, perfect for a quick lunch or dinner.

Ingredients

  • 2 cups cooked chicken, sliced or shredded
  • 6 cups mixed greens (romaine, spinach, or spring mix)
  • 1 cup shredded red cabbage
  • 1 cup shredded carrots
  • 1 large orange, segmented
  • 1 small cucumber, thinly sliced
  • 2 green onions, thinly sliced
  • 2 tablespoons toasted sesame seeds
  • Optional: 1/3 cup sliced almonds or cashews, avocado slices
  • 1/3 cup fresh orange juice
  • 2 tablespoons rice vinegar
  • 1 tablespoon low-sodium soy sauce
  • 11.5 tablespoons honey or maple syrup
  • 1 teaspoon toasted sesame oil
  • 1 small garlic clove, finely grated
  • 1 teaspoon fresh ginger, finely grated
  • 3 tablespoons neutral oil (avocado or light olive oil)
  • Pinch red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. In a dry skillet over medium heat, toast sesame seeds for 2–3 minutes until golden and fragrant. Set aside.
  2. In a jar, combine orange juice, vinegar, soy (or tamari), honey, sesame oil, garlic, ginger, neutral oil, and red pepper flakes. Add a pinch of salt and pepper. Shake until smooth.
  3. In a large bowl, add greens, cabbage, carrots, cucumber, and green onions.
  4. Toss the chicken with 2–3 tablespoons of the dressing to moisten it.
  5. Add dressed chicken and orange segments to the veggies. Drizzle with more dressing to taste.
  6. Sprinkle with toasted sesame seeds (and nuts, if using). Toss gently and serve.

Notes

For meal prep, store ingredients separately and dress right before eating. This salad is best enjoyed cold or at room temperature.
