  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • Salt and pepper to taste
  • Fresh herbs (like dill or parsley)

Instructions

  1. Prepare the Ingredients: Chop the vegetables and dice the salmon into bite-sized pieces.
  2. Sauté the Vegetables: In a large pot, heat some oil over medium heat. Add onions, carrots, and celery, cooking until soft.
  3. Add Garlic and Potatoes: Stir in minced garlic and diced potatoes, cooking for a few more minutes.
  4. Pour in Broth: Add the broth to the pot and bring it to a boil. Reduce the heat and let it simmer until the potatoes are fork-tender.
  5. Add Salmon: Gently stir in the salmon pieces, cooking just until the salmon is fully cooked.
  6. Stir in Cream: Pour in the heavy cream, mixing well. Season with salt, pepper, and herbs.
  7. Serve: Allow the chowder to simmer for a couple more minutes, then serve hot.
