Roasted Tomato Caprese Towers

A fresh, simple twist on a classic Caprese—layers of roasted tomato, creamy mozzarella, and fresh basil stacked into elegant towers.

Ingredients

  • 46 ripe tomatoes, sliced 1/2 inch thick
  • 812 oz fresh mozzarella, sliced to match tomatoes
  • Fresh basil leaves
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Balsamic glaze or reduction for drizzling (optional)
  • Pinch of dried oregano or fresh cracked pepper (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice the tomatoes and mozzarella into even rounds about 1/2 inch thick.
  3. Arrange tomato slices on the baking sheet and brush lightly with olive oil. Sprinkle with a little salt and pepper.
  4. Roast the tomato slices in the oven for 12–15 minutes, until they soften and edges begin to caramelize.
  5. Let the roasted tomatoes cool a few minutes. While they cool, pat mozzarella slices dry with a paper towel to remove excess moisture.
  6. Assemble towers by stacking tomato, mozzarella, and basil leaves. Repeat layers until you reach desired height.
  7. Finish with a drizzle of olive oil or balsamic glaze and a final sprinkle of pepper. Serve immediately or at room temperature.

Notes

For extra protein, add a thin layer of cooked white beans blended with olive oil. Use a ring mold for neat towers.
