Ingredients

Scale
  • 1 cup warm milk (110°F)
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 egg yolk
  • 1 tbsp vanilla extract
  • 1-2 tsp red gel food coloring
  • 2 1/4 tsp active dry yeast
  • 1/4 cup granulated sugar
  • 3 cups all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp salt
  • 1/2 cup unsalted butter, softened (for filling)
  • 1 cup brown sugar (for filling)
  • 2 tbsp ground cinnamon (for filling)
  • 4 oz cream cheese, softened (for icing)
  • 1/4 cup unsalted butter, softened (for icing)
  • 1 cup powdered sugar (for icing)
  • 1 tsp vanilla extract (for icing)
  • 2 tbsp heavy cream (for icing)

Instructions

  1. In a small bowl, mix warm milk, yeast, and 1 tbsp sugar. Let sit for 5-10 minutes until foamy.
  2. In a large bowl, whisk together melted butter, egg, egg yolk, vanilla extract, and red food coloring.
  3. Add flour, cocoa powder, salt, and the remaining sugar. Mix until a dough forms. Knead for 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it, and let it rise for 1 hour, or until doubled in size.
  5. Mix softened butter, brown sugar, and cinnamon in a bowl for the filling.
  6. Roll the dough into a 12×16-inch rectangle. Spread the cinnamon filling evenly over the dough.
  7. Roll tightly and slice into 8-12 rolls. Place the rolls in a greased baking dish and let them rise for 30 minutes.
  8. Preheat the oven to 350°F (175°C) and bake for 20-25 minutes until fluffy and golden.
  9. For the icing, beat cream cheese and butter until smooth. Then add powdered sugar, vanilla, and heavy cream and mix until creamy.

Notes

Customize these rolls by adding chocolate chips or nuts in the filling for extra texture. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze unbaked rolls for up to 3 months.
