  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 1/2 cup pumpkin puree
  • 1/4 cup milk
  • 1 large egg
  • Optional: chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, pumpkin pie spice, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
  4. In a separate bowl, mix together the pumpkin puree, milk, and egg.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined.
  6. Turn the dough out onto a floured surface and gently knead it just a few times, then shape it into a circle about 1 inch thick.
  7. Cut into triangles or use a cookie cutter to create your desired shape.
  8. Place the scones on the prepared baking sheet and bake for 15-20 minutes until golden.

Notes

For best results, ensure the butter is very cold and do not overmix the dough for the flakiest scones.
