A colorful and nutritious dish combining the goodness of quinoa with a variety of vegetables, perfect for quick dinners or meal prep.

  • 2 cups vegetable broth or water
  • 1 cup diced vegetables (like bell peppers, carrots, and peas)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • Olive oil
  • Salt and pepper to taste
  • Fresh herbs (like parsley or cilantro) for garnish

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a medium pot, heat a tablespoon of olive oil over medium heat.
  3. Add chopped onion and garlic, cooking until they soften.
  4. Stir in the rinsed quinoa and toast it for a few minutes.
  5. Add vegetable broth or water, bring to a boil, then reduce to simmer and cover for about 15 minutes.
  6. After 15 minutes, fluff the quinoa with a fork and add your diced vegetables.
  7. Season with salt, pepper, and herbs before serving.

Notes

To achieve the best texture, rinse quinoa well before cooking. Store leftovers in an airtight container for up to five days.
