A creamy and flavorful potato salad perfect for picnics and gatherings.

  • 2 pounds Yukon Gold or red potatoes
  • 3/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1/4 cup chopped onions (red or green)
  • 1/4 cup chopped celery
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon vinegar (optional)
  • Fresh herbs like dill or parsley for garnish

Instructions

  1. Begin by washing the potatoes thoroughly to remove any dirt.
  2. Cut the potatoes into bite-sized pieces and place them in a pot of cold, salted water.
  3. Bring the water to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.
  4. Drain the potatoes and let them cool for a few minutes.
  5. In a large bowl, combine the mayonnaise, mustard, onions, celery, salt, and pepper.
  6. Once the potatoes are cooled, gently fold them into the dressing mixture until well coated.
  7. Garnish with fresh herbs, and serve immediately, or chill in the refrigerator for later.

Notes

For a lighter version, use Greek yogurt instead of mayonnaise. Consider adding chopped jalapeños for a spicy kick.
