A moist and nutty pistachio coffee cake topped with cinnamon streusel. Perfect for brunch or an afternoon treat.
1 ¾ cups all-purpose flour
½ teaspoon baking soda
1 teaspoon baking powder
¼ teaspoon salt
½ cup unsalted butter (softened)
¾ cup granulated sugar
2 large eggs
¾ cup Greek yogurt or sour cream
1 teaspoon alcohol-free vanilla extract
¾ cup ground pistachios (unsalted)
For streusel: ¼ cup brown sugar, ¼ cup flour, 2 tbsp cold butter, ½ tsp cinnamon
1. Preheat oven to 350°F (175°C). Grease a 9×9 baking dish.
2. In one bowl, whisk together flour, baking soda, baking powder, and salt.
3. In another bowl, cream butter and sugar until fluffy.
4. Add eggs one at a time, then mix in yogurt and vanilla.
5. Fold dry ingredients into wet. Stir in ground pistachios.
6. Mix streusel ingredients in a small bowl using a fork.
7. Pour half the batter into pan, add half streusel. Repeat.
8. Bake 40–45 minutes or until golden and springy to touch.
9. Cool before slicing. Optionally drizzle with glaze.
Let cake rest 20 minutes before serving for best texture.
Store covered at room temp for 3 days, or refrigerate for up to a week.
