A delightful, creamy potato soup that brings comfort and satisfaction with each spoonful, perfect for chilly evenings.

Ingredients

  • 4 large Potatoes, peeled and diced
  • 1 Onion, chopped
  • 4 cups Chicken broth or Vegetable broth
  • 1 cup Heavy cream
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 2 tablespoons Butter
  • Optional toppings: cheese, bacon bits, green onions

Instructions

  1. Peel and dice the potatoes and chop the onions.
  2. In a large pot, melt butter over medium heat and add the onions. Cook until soft.
  3. Add the diced potatoes and broth, bringing to a boil. Lower to a simmer and cook until the potatoes are tender.
  4. Add salt, pepper, and heavy cream. Stir well and cook for a few more minutes.
  5. Optional: Blend the soup for a creamier texture or leave it chunky, as preferred.

Notes

To achieve your desired texture, use a potato masher or immersion blender. This soup can be stored in the refrigerator for up to three days.
