Delicious and nutritious no-bake protein balls combining the flavors of peanut butter and pumpkin for a perfect snack.

Ingredients

  • 1 cup rolled oats
  • 1/2 cup peanut butter
  • 1/2 cup pumpkin puree
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin spice
  • A pinch of salt

Instructions

  1. In a large bowl, mix together the oats, peanut butter, pumpkin puree, honey or maple syrup, vanilla extract, pumpkin spice, and salt.
  2. Once well combined, use your hands to form the mixture into small balls, about one inch in diameter.
  3. Place the formed balls on a baking sheet lined with parchment paper.
  4. Refrigerate for at least 30 minutes to firm up.

Notes

Store in an airtight container in the refrigerator for up to a week or freeze for longer storage. They are delicious straight from the fridge, but can be warmed for a few seconds in the microwave.
