A delightful bread that combines sweet, fresh peaches with a fragrant almond extract, perfect for breakfast, snacks, or dessert.

  • 2 large peaches, peeled and chopped
  • 1/2 tablespoon lemon juice
  • 3/4 teaspoon pure almond extract
  • 1 1/2 cups all-purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 to 1 1/2 teaspoons ground cinnamon
  • 1/8 teaspoon salt (optional)
  • 2 large eggs, room temperature
  • 1/2 cup granulated sugar
  • 1/2 cup melted and cooled unsalted butter
  • 1/2 cup milk, room temperature

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8 1/2 x 4 1/2-inch loaf pan and line it with parchment paper, leaving about 2 inches of overhang.
  2. In a small bowl, combine the chopped peaches, almond extract, and lemon juice. Set aside.
  3. In a large mixing bowl, whisk together the flour, baking powder, cinnamon, and salt (if using).
  4. In a medium bowl, whisk the eggs and sugar together for about 30 seconds until combined. Stir in the milk and melted butter.
  5. Pour the wet mixture into the dry ingredients and whisk until just combined—do not overmix.
  6. Gently fold in the peach mixture, ensuring even distribution.
  7. Spoon the batter into the prepared loaf pan and smooth the top.
  8. Bake for 44–48 minutes, or until a toothpick inserted into the center comes out clean.
  9. Let the bread cool in the pan for 30 minutes. Carefully lift it out using the parchment overhang and transfer it to a wire rack to cool completely. Serve warm or at room temperature.

Notes

Use ripe peaches for the best flavor and sweetness. Avoid overmixing the batter. You can add nuts or chocolate chips for extra texture.
