Creamy Parmesan Chicken Penne Pasta

A cozy pasta dish featuring tender slow-cooked chicken in a creamy sun-dried tomato sauce, perfect for busy weeknights or special occasions.

Ingredients

  • 2 lb boneless, skinless chicken breasts (or thighs)
  • 1 cup low-sodium chicken broth
  • 1/2 cup oil-packed sun-dried tomatoes, drained and sliced
  • 4 garlic cloves, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp paprika
  • 1/21 tsp red pepper flakes (to taste)
  • 1 tsp kosher salt and 1/2 tsp black pepper (adjust to taste)
  • 1 cup heavy cream
  • 4 oz cream cheese, softened (optional)
  • 3/4 cup freshly grated Parmesan, plus more to serve
  • 1012 oz short pasta (penne, rigatoni, or cavatappi)
  • 2 cups baby spinach (optional)
  • 12 tbsp sun-dried tomato oil or olive oil
  • Fresh basil or parsley, for garnish (optional)
  • Lemon wedge, for a bright finish (optional)

Instructions

  1. Lightly oil the slow cooker and add chicken, broth, sun-dried tomatoes, garlic, Italian seasoning, paprika, red pepper flakes, salt, and black pepper.
  2. Cover and cook on Low for 3–4 hours or on High for 2–2.5 hours, until the chicken is tender and reaches 165°F.
  3. Remove chicken to a plate and shred or slice. Keep the cooking liquid in the slow cooker.
  4. Stir heavy cream and cream cheese into the slow cooker. Cover and cook on High for 15–20 minutes, stirring once, until smooth.
  5. Stir in Parmesan until melted. Add spinach and let it wilt, about 2–3 minutes.
  6. Boil pasta in salted water until al dente, reserving 1/2–1 cup of pasta water, then drain.
  7. Return chicken to the slow cooker, add cooked pasta and a splash of pasta water to loosen the sauce as needed, and toss gently.
  8. Adjust salt, pepper, and heat as desired. If desired, add a squeeze of lemon before serving, and top with extra Parmesan and herbs.

Notes

Store leftovers in an airtight container for up to 4 days. Can be frozen for up to 3 months without pasta.
