A warm and spiced pumpkin bread recipe perfect for the fall season, celebrating the flavors of pumpkin with a blend of autumn spices.

  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 1/2 cup brown sugar, packed
  • 3 large eggs
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • Optional: 1/2 cup chopped nuts or chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
  2. In a mixing bowl, combine the pumpkin puree, vegetable oil, sugar, brown sugar, eggs, and vanilla extract. Mix until well combined.
  3. In a separate bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
  4. Gradually add the dry ingredients to the pumpkin mixture, stirring gently until just combined. If adding nuts or chocolate chips, fold them in now.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for approximately 60-70 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes

For added moisture, consider swapping out some of the oil for unsweetened applesauce. Make sure not to overmix the batter.
