A warm and delicious breakfast of oats baked with juicy mixed berries, perfect for any time of the year.

  • 2 ½ cups milk (or non-dairy alternative)
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • ½ cup maple syrup or honey
  • 1 cup mixed berries (fresh or frozen)
  • ½ teaspoon salt
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking dish by greasing it lightly.
  2. Combine rolled oats, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Whisk together milk, maple syrup (or honey), and vanilla extract in another bowl.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Fold in the mixed berries gently, ensuring they are evenly distributed.
  6. Transfer the mixture into the greased baking dish and spread it out evenly. Bake for 30-35 minutes, or until it’s set and golden on top.
  7. Let it cool slightly before cutting into squares. Serve warm, and add a drizzle of maple syrup or a dollop of yogurt if desired.

Notes

For a creamier texture, let the baked oatmeal rest for a few minutes after taking it out of the oven. Store leftovers in an airtight container in the refrigerator for up to 5 days.
