A delightful baked oatmeal packed with juicy berries and wholesome oats, perfect for breakfast or brunch.

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (dairy or non-dairy)
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups mixed berries (fresh or frozen)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine rolled oats, baking powder, salt, and any spices you like.
  3. In another bowl, whisk together milk, eggs, maple syrup, and vanilla extract.
  4. Pour the wet ingredients into the bowl with the dry ingredients and mix until combined.
  5. Gently fold in the mixed berries, being careful not to crush them.
  6. Pour the mixture into a greased baking dish and smooth the top. Bake for 30-35 minutes or until the top is golden.
  7. Allow to cool slightly before serving. Enjoy it warm, topped with a dollop of yogurt or a drizzle of more maple syrup if desired.

Notes

Use old-fashioned rolled oats for the best texture. Store leftovers in an airtight container in the fridge for up to 5 days.
