This Mediterranean-style cauliflower soup is smooth, cozy, and full of bold flavor. Made with just a handful of pantry ingredients, it’s a healthy, plant-based dish you’ll crave all year round.
1 head of cauliflower, chopped
1 onion, diced
2 cloves garlic, minced
4 cups vegetable broth
1 teaspoon dried oregano
1 teaspoon cumin
2 tablespoons olive oil
Salt and black pepper to taste
1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 5 minutes until soft.
2. Add minced garlic and cook for 1 more minute until fragrant.
3. Stir in chopped cauliflower, oregano, and cumin. Cook for 2 minutes, stirring well to coat.
4. Pour in the vegetable broth. Bring to a simmer, cover, and cook for 20–25 minutes until cauliflower is very tender.
5. Use an immersion blender (or transfer in batches to a blender) to blend until smooth and creamy.
6. Season with salt and pepper to taste. Serve warm with toppings of choice.
For a richer texture, add 1/2 cup of cooked white beans before blending.
This soup stores well in the fridge for up to 5 days or in the freezer for up to 3 months.
