A flavorful one-pot dish combining lemon rice with chickpeas, spinach, tomatoes, and feta for a healthy and satisfying meal.

Ingredients

  • 1 cup rice
  • 2 cups vegetable broth or water
  • 1 can chickpeas, drained and rinsed
  • 2 cups fresh spinach, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 lemon, juiced
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a pot, bring the vegetable broth (or water) to a rolling boil. Add the rice, reduce heat to low, cover, and simmer for 18-20 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Add chickpeas, spinach, and cherry tomatoes. Sauté for about 5 minutes until spinach wilts and tomatoes soften.
  3. Fluff the rice with a fork and stir it into the skillet with the veggies.
  4. Squeeze in fresh lemon juice and season with salt and pepper. Mix well to combine.
  5. Serve topped with crumbled feta cheese and a sprinkle of fresh parsley.

Notes

This recipe can be adjusted to suit taste preferences or dietary restrictions. For a vegan version, skip the feta or use a vegan alternative.
