  • For the Pasta:
  • 12 oz (340g) lumache pasta
  • 4-6 quarts of water
  • 1-2 tbsp salt
  • For the Sauce:
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 can (28 oz) crushed tomatoes
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp red chili flakes (optional)
  • Salt and pepper to taste
  • For Garnish:
  • Fresh basil leaves, torn
  • Grated Parmesan cheese
  • A drizzle of extra virgin olive oil

Instructions

  1. Cook the Pasta:
    Bring 4-6 quarts of water to a boil in a large pot. Add 1-2 tablespoons of salt.
    Add the lumache pasta and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
  2. Prepare the Sauce:
    Heat olive oil in a large skillet over medium heat. Add garlic and onion, sautéing until fragrant (2-3 minutes).
    Stir in crushed tomatoes, oregano, basil, and chili flakes (if using). Season with salt and pepper.
    Simmer the sauce for 10-15 minutes, stirring occasionally.
  3. Combine Pasta and Sauce:
    Add the cooked lumache pasta to the skillet with the sauce. Toss to coat evenly.
    Gradually add reserved pasta water until the sauce reaches your desired consistency.
    Stir in torn basil leaves.
  4. Serve:
    Divide the pasta among serving plates.
    Top with grated Parmesan, a drizzle of olive oil, and extra basil leaves.
