A refreshing layered dessert with a crunchy crust and creamy lemon filling, perfect for summer gatherings.

Ingredients

  • 1 cup vanilla cookie crumbs
  • 1/2 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup lemon curd
  • 1 cup heavy cream
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a bowl, mix cookie crumbs with melted butter and press into the bottom of a 9×9 inch pan to form the crust. Bake for 10 minutes and let cool.
  2. In a separate bowl, beat softened cream cheese and powdered sugar until smooth. Spread this mixture over the cooled crust.
  3. Layer lemon curd over the cream cheese layer.
  4. In another bowl, whip heavy cream with sugar and vanilla until stiff peaks form. Gently fold in shredded coconut if using. Spread over the lemon curd layer.
  5. Refrigerate for at least 240 minutes before serving. Enjoy!

Notes

Make sure your cream cheese is softened for easy mixing. Chill the dessert overnight for the best flavor.
