Light, cozy and brightened with lemon, this one-pot soup features tender chicken, soothing vegetables, and orzo pasta in a comforting broth a family favorite.
2 sticks celery, finely chopped
2 medium carrots, peeled and finely chopped
1/2 medium onion, chopped
1 tbsp butter
1 tbsp olive oil
3 cloves garlic, minced
2 tbsp all-purpose flour
6 cups chicken broth
1/4 tsp Italian seasoning
1.5 lbs boneless skinless chicken breasts
1 cup orzo pasta, uncooked
1 tbsp lemon juice (plus more to taste)
1 tbsp fresh parsley, chopped (plus more to taste)
Salt and pepper, to taste
1. In a large pot or Dutch oven, sauté celery, carrots, and onion with butter and olive oil over medium-high heat for 5–7 minutes until softened.
2. Add garlic and cook for 30 seconds. Stir in flour and cook for another minute.
3. Pour in chicken broth, stirring until flour dissolves. Add Italian seasoning and chicken breasts. Bring to a boil.
4. Cover partially, reduce heat, and simmer for 15 minutes.
5. Add orzo and cook uncovered for about 10 minutes, stirring often, until al dente.
6. Remove chicken, shred or slice, and return to pot.
7. Stir in lemon juice, parsley, salt, and pepper. Serve hot.
For make-ahead or freezer prep, cook orzo separately and add when serving.
Can substitute chicken thighs or cooked rotisserie chicken.
Use low-sodium broth to control salt content.
