  • 1 cup canned pumpkin puree
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp salt
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, combine the pumpkin puree, granulated sugar, brown sugar, oil, eggs, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring just until combined. Mix in chopped nuts if using.
  5. Spoon the batter into the muffin cups, filling them about 2/3 full.
  6. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let them cool in the pan for a few minutes, then transfer to a wire rack to cool completely.

Notes

For a rich flavor, use pure pumpkin puree (not pumpkin pie filling). Avoid overmixing the batter; a few lumps are okay to keep the muffins tender. For added moisture, try incorporating a half cup of unsweetened applesauce into the wet ingredients.
