Quick and simple chicken fried rice with juicy chicken, colorful vegetables, and perfectly cooked rice, making it a favorite for busy weeknights.

Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 pound chicken breast, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 2 eggs, beaten
  • 2 green onions, sliced
  • 2 tablespoons vegetable oil
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken and cook until no longer pink, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add another tablespoon of oil, then the mixed vegetables. Sauté for 3-4 minutes until tender.
  4. Push the vegetables to one side of the skillet, then add the beaten eggs. Scramble the eggs until fully cooked.
  5. Add the cooked rice and chicken back into the skillet, mixing everything together.
  6. Pour in the soy sauce and season with salt and pepper. Stir-fry everything for another 3-5 minutes until heated through.
  7. Finish with sliced green onions and serve hot!

Notes

Use day-old rice for better texture. Store leftovers in an airtight container in the refrigerator for up to 3 days.
