A comforting and creamy soup featuring mushrooms, paprika, and herbs perfect for chilly days and hearty dinners.

Ingredients

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

1 pound fresh mushrooms, sliced

2 cups vegetable broth

1 tablespoon soy sauce

1 teaspoon paprika (sweet or smoked)

1 teaspoon dried thyme

Salt and pepper to taste

1 cup sour cream or dairy-free alternative

2 tablespoons fresh parsley, chopped

Instructions

1. In a large pot, heat olive oil over medium heat. Sauté onion until translucent.

2. Add garlic and mushrooms. Cook for about 10 minutes until mushrooms are soft.

3. Pour in broth and soy sauce. Stir in paprika, thyme, salt, and pepper.

4. Bring to a gentle boil, then reduce heat and simmer for 15–20 minutes.

5. Remove from heat. Stir in sour cream until fully combined.

6. Taste and adjust seasonings. Garnish with parsley and serve.

Notes

For a dairy-free version, use cashew or oat-based sour cream.

To bulk up the soup, add cooked barley or wild rice before serving.

Store leftovers in an airtight container for up to 3 days.
