A delightful cake that transforms leftover sourdough discard into a warm, comforting dessert filled with sweet apples.

  • 1 cup sourdough discard
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil
  • 2 cups chopped apples (about 2 medium apples)
  • Optional: nuts or raisins for added texture

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a mixing bowl, combine the flour, baking soda, cinnamon, and salt. Set aside.
  3. In another bowl, whisk together the sourdough discard, sugar, eggs, and vegetable oil until smooth.
  4. Gradually add the dry ingredients into the wet mixture, stirring until just combined.
  5. Fold in the chopped apples and any nuts or raisins if using.
  6. Pour the batter into the prepared baking pan and smooth the top.
  7. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow the cake to cool before slicing and serving.

Notes

For a vegan version, replace eggs with flax eggs or applesauce. For gluten-free, use a gluten-free flour blend.
