A moist and flavorful quick bread filled with tender apple pieces and a hint of cinnamon, perfect for any occasion.

  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ cup vegetable oil
  • 2 large eggs
  • 2 cups peeled and chopped apples (about 2 medium apples)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl, whisk together the oil, eggs, apples, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Avoid over-mixing.
  5. Transfer the batter to the prepared loaf pan and smooth the top.
  6. Bake for about 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  7. Allow it to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.
